  • Hi: Cab Sauv, Carmenere, Malbec, Syrah
• Medium-pigment reds can be tricky, and appear lower or higher.
• Group the Lo/Med and Med/Hi together for deduction.
• Maps: Napa Valley. Draw the map with:
  • Outlines (Vaca and Mayacamas ranges)
  • Anchors (Cities of Napa and St. Helena)
  • Appellations (Bubbles)
  • Group appellations into sets of 3-4 (Diamond Mtn, Spring Mountain, Mt. Veeder)

  • Organize (see bubble maps)
  • Make Visuals
    • Maycamas Mountains > Diamond Mtn > Spring Mtn > Mt Veeder
    • Yo Momma > Wears Diamonds > In a hot spring > Wearing a beaver hat
• White wines, acid vs sugar
  • Acid is a pointy triangle. Sugar rounds off the corners.
  • Conversely, acid lower the perception of sugar.
  • Kept in balance, both are necessary for deliciousness.
